Chocolate & Banana Muffins

I was so excited when I bought my first silicon cups for baking muffins from Ikea. They were so cute and colorful. I even bought the paper muffin cups from Ikea so that I can quickly bake some muffins with the silicon cups. I didn’t really like the paper cups because I find that it doesn’t stay in shape very well but I do like the silicon cups.

This recipe is from the book that my sister got me. I have tried baking banana muffins from other recipes but this one seems to get better reviews from everyone. I didn’t compare the ingredients between the recipes to find out what the secret was, I just need to make sure I don’t lose this recipe. One thing I don’t understand about banana muffin recipes is that they always like to tell you how many bananas to use and never the weight. There are so many different types of bananas and they come in many different sizes. So 2 bananas can vary quite abit if you use different bananas. Anyway I weight the bananas and wrote it down. In case next time I only have pisang emas then I need to put more than 2 bananas!

Chocolate And Banana Muffins (Recipe Book : Food Lovers Cupcakes & Bakes)

120g           Self Rising Flour (240g)

120g           Sugar (I only used 100g)

1tsp             Bicarbonate of soda (2tsp)

Pinch         Salt

1/2tsp        Ground Cinnamon (omitted)

100g          Bittersweet chocolate (70% cocoa solids) chopped (I only used 100g)

1                 Egg beaten (2)

120g         Butter, melted (240g)

1tsp           Vanilla Extract (1tsp)

2/(200g)  Very ripe bananas (400g)

For Topping:

Banana Slices

Melted Butter



Heat oven to 180C. (I used 150C)

Grease a 6 hole muffin tin or use paper cups

Sift the flour , sugar, bicarbonate of soda, salt and cinnamon into a mixing bowl. Stir in the chopped chocolate.

Mash the banana well. 

Mix banana and egg and butter and vanilla together

Make a well in the center of the flour mixture and add in the banana mixture. Combine but still slightly lumpy. 

Spoon mixture into the muffin cups and top each with banana slices and brush the banana slices with melted butter. 

Bake for 25-30minutes until firm and risen. ( I baked for 25minutes)

Leave in the tin for 5 minutes , then place on wire rack to cool

Makes 6 (I made more than 12)
