Choc chip muffins
Posted: November 25, 2011 Filed under: Bakes Leave a comment »My sister got me a muffin recipe book and i am trying out the chocolate chip muffins! The muffin cups that i had were big so there were only 6 muffins from this recipe.
Huge muffin with a nice golden colour 🙂
Maybe next time I should try to add in some walnut, I find this a little plain. Muffins anyone?
Chocolate Chip Muffin (Recipe Book : Food Lovers Cupcakes & Bakes)
Ingredients
110g   Butter
75g    Sugar (I used 40g)
2tbsp  Light brown sugar ( I used 1tbsp)
2 Â Â Â Â Â Eggs beaten
175g   All purpose flour
1tbsp   Baking powder
110ml  Milk
1/2tbsp Vanilla extract
1cup(175g) Chocolate chips (I used 1/2cup because that was all I had)
METHOD:
Heat oven to 190C. Place paper case in a 12 hole muffin tin.
Beat butter and both the sugar until light and fluffy.
Beat in the eggs, a little at a time, mixing well.
Sift the flour and baking powder into the mixture and fold in gently with the milk and vanilla extract.Â
Gently stir in half the chocolate chips.
Spoon the mixture into the paper cups.Sprinkle the remaining chocolate chips over the top of each muffin.Â
Bake for 20-25minutes until golden and risen.
Leve in the tins for 5 minutes, then place on a wire rack to cool.Â
Makes 12Â
(I only got 6 huge muffins- baked for 22minutes )
