Baked Custard & Steamed Custard

I had leftover egg yolks from my friands recipe and was wondering what recipe I can use them for. I found this site Food & Family where they give you a list of links that you can go to, to find recipes for the leftover egg yolks. It starts from one leftover to 12 leftover egg yolks.

I had 4 leftover yolks and was interested in trying the baked custard recipe that I found from the link southernfood but I didn’t want to use evaporated milk so I mixed a few recipes together and made my version.

Even though I have not tried making baked custard before, I think the result was pretty good. The texture was really smooth. It wasn’t too sweet. Some may say it is not sweet enough. The problem was that my ramekins were really big, so it didn’t fill up to the top which made it a little shy looking. But the taste was still good. It can be served warm or chilled. I prefer them chilled.


2cups – Full cream milk

4          – Egg yolks

2tbsp  – Sugar

1tsp     – Vanilla extract

1/4tsp – Salt

a dash of ground nutmeg


Heat the milk in a medium size saucepan. 

Whisk the egg yolks slightly in a bowl , add in the sugar, salt and vanilla extract .

Once the milk is bubbling on the sides of the saucepan,remove from heat.

Gradually pour the hot milk into the egg mixture, whisking constantly. 

Sieve though the mixture and pour into 4 ramekins. 

Sprinkle some nutmeg.

Place the ramekins in a square pan, pour hot water in the pan to half the height of the ramekin.

Bake uncovered at 160C for 40-50minutes, or when  the tip of a knife comes out clean when inserted into the centre of the custard. It should still be a little wobbly.

Remove ramekins from pan and let it cool. 

Serve them warm or chilled. 

Then I remembered there was another recipe that I have bookmarked to try. It is from a youtube video cooking with dog . This Japanese lady makes all sort of Japanese delights which all look so yummy. This is the first time I am trying her recipe. It was really nice and simple to make because she shows you every step.

I think I prefer this one to the baked custard now. Go to watch her video if you want to learn how to make this. I managed to get 4 from this recipe. I used the same ramekins and as you can see, it is not very tall because I didn’t fill it all the way up. It will be too big a serve if I did.
